Peach Pie
Wondering what to do with fresh fruit? Make this no bake peach pie. Easy to make and made with all natural ingredients. Total party hit or just fun to snack on. Give it a try and let me know how it goes.
Recipe
Crust
In a large bowl, mix together ingredients. Press mixture evenly across bottom of pan and sides. Place in fridge until hardened while making filling and topping. Can be overnight.
2 cups almond flour
1/3 cup coconut sugar
1/4 cup + 1 tablespoon of coconut oil, melted
2 tablespoons of maple syrup
Pinch of salt
Filling
Drain liquid and scoop out hardened coconut cream in bowl. Blend with mixer until creamy, slowly mix in other ingredients. Put in fridge for at least one hour.
2 Cans Coconut Milk, refrigerated over night
¼ Cup Maple Syrup
Juice of 1 Lemon
Zest of 1 Lemon
Topping
Remove filling and crust from fridge / freezer, spread filling across crust. Slice your fruit and decorate, garnish with mint for colour. Serve immediately.
