Maple Muffins
You have to try these homemade maple muffins, the perfect muffin recipe for you and your kids. They’re healthy, delicious and easy to make. Your kids will love them, and you can even make them together.
HEALTHY HOMEMADE MUFFINS
These muffins are moist, soft, fluffy and full of the most delicious maple flavour! They are made with whole wheat flour and maple syrup to make them health(ier), and they have less than 10 ingredients — so they are easy to make with your kids.
Try them for breakfast with fruit and yoghurt, put them in your kid’s lunch as a snack — or have them as an after school treat.
TOPPINGS
Because these muffins are light and fluffy, they create the perfect base for really any topping you like. Stir in blueberries, chocolate chips, nuts or top with cinnamon sugar or frosting.
I added maple buttercream frosting with a roasted maple pecan topping to jazz it up and they actually taste like cupcakes.
MUFFIN RECIPE
Ingredients
½ cup butter (room temperature)
⅓ cup brown sugar
½ cup maple syrup
1 large egg
2 tsp pure maple or vanilla extract
2 tsp baking powder
1 tsp salt
½ tsp baking soda
1 + 3/4 cups whole wheat flour
½ cup plant/regular milk
½ cup yoghurt
Steps
Preheat oven to 375 degrees F, grease muffin pan (regular size or mini)
In a large bowl, cream butter and sugar with hand or stand mixer, about 2 minutes
Mix in maple syrup, egg, vanilla extract
Then mix in baking powder, salt, baking soda
In a small bowl, whisk together milk and yoghurt until smooth
Mix in one cup of flour, followed by the sour cream/milk mixture, and then the final cup of flour until combined
Fill each muffin cup ¾ full, and bake in oven for 15-17 minutes for regular muffins or 12-14 minutes for mini, until slightly golden around the edges
Cool for 10 minutes, then add frosting or serve
MAPLE BUTTERCREAM RECIPE
Ingredients
1 cup butter (room temperature)
4 cups powdered sugar
1 tsp maple or vanilla extract
2 TBSP + 2 tsp maple syrup
1 tbsp plant or whole milk
Steps
Cream butter with hand mixer (about two minutes)
Add in sugar, blend two together
Add in maple extract, maple syrup and milk
Once combined, spread on muffins with spatula or piping tube
Store muffins in air tight container on countertop for 3 days, then freeze.
