You have to try these FUN and EASY Earth Day sugar cookies. Perfect for a special occasion or everyday treat. Your family will love them!
Oh, and as an added bonus, I made the icing colouring from all natural ingredients. Can you guess what they are?

Recipe
1 ¾ cups whole wheat pastry flour, plus more for rolling
½ teaspoon baking powder
¼ teaspoon sea salt
½ cup unsalted butter, softened to room temperature
½ cup maple syrup, at room temperature
1 large egg, at room temperature
1 teaspoon vanilla extract
Icing
1/2 cup icing sugar
1/2 tsp vanilla
1-2tbsp almond milk
Pink Icing
Muddle raspberries in a dish, strain juice
Miix with 1/2 cup icing sugar
Blue Icing
Mix 1/2 cup icing sugar with 1 TBSP almond milk
Sprinkle in blue spirulina
Mix dry ingredients, set aside. Cream butter and maple syrup with mixer, add wet ingredients. Slowly add in dry ingredients. Put dough in fridge for 1-2 hours. Roll out, and cut with cookie cutters. Place on tray with parchment paper. Bake for 8-10 minutes at 350 and decorate with icing of choice. Enjoy!
