Rainbow Pie
We’re celebrating love and inclusivity in our house with a rainbow pie. Happy Pride Month 🫶🏻
This little, colourful pie was so incredibly beautiful and delicious all at the same time – just like love for all. Not to mention, healthy! Made with all natural ingredients. Your kids will love it! Serve it for breakfast, dessert or as a snack.
RECIPE
Pie Crust
2 eggs
⅓ cup apple sauce, unsweetened
½ cup pure maple syrup
1 teaspoon vanilla extract
3 cups gluten-free rolled oats
½ teaspoon sea salt
1 tablespoon cinnamon
Mix dry ingredients in large bowl, set aside. Mix wet ingredients, and combine with dry. Pour into greased 9 inch pie pan and pat down flat. Bake at 375 for 10-12 minutes. Let cool for 10 minutes
Coconut Whipped Cream
1 14- oz can coconut milk , full-fat (chill can in fridge over night)
3-4 tablespoons powdered sugar
½ teaspoon vanilla extract
A pinch of sea salt
Blend on high speed with hand mixer for 3 minutes until creamy. Layer onto pie crust.
Topping
Your avourite assorted fruit. You can also use nuts, dates, coconut and chocolate.
Put in fridge to chill. Serve and enjoy!
